The method behind the numbers

How a tiered cake actually stands up

A stacked cake is not cake resting on cake. Each tier sits on its own board, and that board rests on dowels — bubble tea straws, plastic dowels or wooden dowels — pushed into the tier below and cut dead level with its surface. The cake around the dowels carries nothing; the dowels carry everything. Done properly, the bottom tier could be mousse and the stack would still stand, because the load runs down the supports, board to board, all the way to the drum.

That is why dowel count follows the tier above, not the tier below: a 10″ tier landing on top needs its weight spread across more points than a 6″ one, wherever it lands. And it is why every dowel must be cut to exactly the same height — one proud dowel tilts the board, and a tilted board is how a tier starts walking sideways on the drive.

Why tall tiers change the rules

Modern tall tiers — six inches and up, the LAYER’D silhouette — hold more cake, so everything under them works harder. A tall tier weighs roughly half again what a standard tier of the same diameter does, and it raises the whole cake’s centre of gravity, which is what topples stacks in a braking car. So tall tiers earn extra dowels beneath them, and a tall tier of eight inches or more should really be built as two shorter tiers with a board and supports of their own between them — the double-barrel method — then stacked as one.

Doweling a tier, step by step

  1. Chill the tier first. A cold, firm cake takes dowels cleanly; a soft one tears.
  2. Mark the footprint. Centre the board of the tier that will sit on top and trace it lightly — every dowel must land inside that line.
  3. Measure with one dowel. Push it straight down to the board, mark it flush with the surface, pull it out, and cut the full set to that mark so all are identical.
  4. Place the ring. Space the dowels evenly about an inch inside the traced line, pushing each straight down to the board. Six or more? One goes in the centre.
  5. Check level. Lay a board across the dowels — it should sit flat with no rock. Fix any proud dowel now, not after stacking.
  6. Stack cold and centred. Lower the next tier on its board, centre it against your trace, and add the sharpened central dowel through all tiers if the cake needs one.

Boards, drums and the central dowel

Every upper tier lives on a thin board its exact size, so the edge vanishes into the covering. The whole cake lives on a drum — a half-inch-thick board at least two inches wider than the base tier, more if fresh florals need somewhere to land. Four or more tiers want a doubled drum; a flexing base undoes everything above it. The central dowel — one sharpened rod driven down through every tier and board after stacking — is what keeps tiers from shifting sideways as a unit. Three tiers travelling any real distance should have one; four tiers always should.

Getting it there

Cakes travel cold, flat and slow. Chilled buttercream is rigid armour; at room temperature it is soft furniture. The cake rides on a level surface — the footwell or flat trunk floor on a non-slip mat, never a seat, never a lap — in a pre-cooled car with the AC working. Warm day, no AC? Don’t drive it stacked. And when a cold cake meets warm venue air it will bead with condensation: normal, harmless, and it evaporates on its own as long as nobody touches it.
